Wonderpot recipe!

Happy Halloween to all!

 Truth is, Halloween has never really been my favorite holiday - I'm much more into the two that follow! Bring on Thanksgiving and Christmas! But when push comes to shove, I think I can whip something up like it's my job. Exhibit A - D...

College pretty much brought the true Halloween out of me, those were the glory years for my costumes. My parents were less than thrilled when I showed them photos of my and Peter as a white trash couple - which involved tons of cleavage, my thong sticking out, a pregnant belly, and a shirt that read "get mama a drink".

Last night I whipped up a delicious meal that I want to share with you all because I think it's revolutionary.

I'm sure you've seen the "one pot wonder pasta" floating around Pinterest. It caught my eye a few weeks back and I decided to test it out and see if it actually does work! I took Martha Stewart's recipe and added my own little jazz to it! If you try to make it, let me know what you think!

Tomato Basil Wonderpot
serves 4-6 as an entree
Ingredients:
1 box of linguine pasta
15 oz can of fire roasted diced tomatoes
1 medium sweet onion, sliced in thin strips
4 cloves of garlic, sliced thin
Handful of fresh cherry tomatoes, cut in half (You could leave these out if you're not a tomato lover) 
1 cup mini meatballs (optional) 
4 1/2 cups of regular vegetable broth (not low sodium)
10-12 leaves of fresh basil, diced
1/2 tsp red pepper flakes (more or less depending on your taste)
2 tsp dried oregano
Extra virgin olive oil
Handful of spinach
Salt & pepper
Parmesan cheese for garnish

In a large stock pot-
Place pasta, can diced tomatoes, onion, garlic, cherry tomatoes, and mini meatballs in the pot. Pour in the vegetable broth. Add the fresh basil, red pepper flake, and oregano. Drizzle the top with olive oil.

Cover the pot and bring to a boil. Keep covered and reduce to a low simmer for about 10 minutes, stirring the pot every 2 minutes or so. Towards the end of the 10 minutes, stir in a handful of fresh spinach. Cook until almost all the liquid has evaporate, keeping in mind that some of the juice will still be absorbed by the pasta. I left about 2 inches of liquid in the bottom of the pot, which later disappeared!

Season to taste with salt and pepper. Stir pasta a few times to evenly distribute the liquid left in the bottom of the pot. Serve in a bowl, garnished with parmesan cheese!

Easy as that - ENJOY the delicious meal and the fact that you only have 1 pot to clean!

  2. Thos looks amazeballs! I will def have to try as spag and turkey meatballs is an every week meal in our house.
